What is Red Honey Process?
Honey processing involves the cherry peel being removed partially and some amount of the fleshy inside, the “mucilage”, being left on while the beans are dried. Red honey is processed under more shade to slow down the drying time. This will increase the amount of humidity the beans are exposed to. The name honey is used as this processing method is said to create a sweeter coffee.
